The Trillium paring knife is designed for detailed in-hand work and board-cutting of smaller items. The bite of its CPM Magnacut blade steel will impress you right out of the shipping box and it will hold its edge much better than the vast majority of factory made knives. Well maintained, it can last a lifetime.

The Trillium’s standard G10 handle material is waterproof and practically indestructible. This knife is also available with an optional carbon fiber composite handle, which, besides looking cool is also strong and waterproof, and a little bit lighter than G10.

The Trillium takes its name from a BC-native white-flowered forest plant that may take 15 years to bloom.

    This is a review for 3 kitchen knives.

    I recently purchased the Alder 8″ Chef, Sitka Santoku (both in CPM S35VN), and Trillium Paring (MagnaCut).

    All three knives came as sharp as you could ask for and have exceeded my expectations. Don’t hesitate if you’re reading this trying to decide if they’re a good deal, these are the best value kitchen knives I’ve owned.

    I’ve now used them to prepare a few large batch meals for our family over the holidays (including a dinner with 14 people) and can say they’re just a joy to use. They’re light, the handle ergonomics are great for full grip or pinch grip, and most importantly they cut and slice and stay sharp! The G10 is so reassuring in the hand compared to the thermoplastic on our previous favorite “quality German” knives.

    In particular, I put the Santoku to the test against my japanese Nakiri (in Aogami Super) to prep 2 bags of carrots, a giant pile of potatoes, many onions, a couple bunches of celery, garlic, and ginger. I made sure to hone (ceramic 3000 grit) and strop (green compound on leather) both knives before starting. I used a maple edge-grain cutting board. I used the knives interchangeably every couple of minutes and I can honestly say that in terms of pure slicing and chopping there was no perceivable difference. I still like the full flat edge on the Nakiri but the ergonomics of your Santoku are superior… and it’s stainless! Maybe in another couple of months I’ll have something else to say, but at 1/2 the price and made in Canada… that Santoku is just something else!

    My daughter put the small Paring knife to work (she’s 12, makes most of her own food, and prefers a small knife). The MagnaCut is just the ticket for her – she leaves it in the sink, cuts on whatever cutting board is closest, and uses that thing for tasks normally best met with a bigger knife. I checked it after a few days and it looks fully pristine with what seems to still be an exceptional edge. I just sliced up a mango with it and it’s a really nice knife to use with a long handle and just the right blade shape for precise cuts.

    The larger Chef’s knife has seen less intense use so far but as expected it’s performed very well indeed. Chops and slices as it should. Made very quick work of a large ham, turkey, and bag of apples and was so light in the hand (important for those of us with arthritis!).

    This knife is perfect. It is the right length for tournee work and feels very intuitive in the hand. The handle is slender and ergonomic which lends itself to any grip. The milling is very thin behind the edge for clean precise cuts and has just enough flex for fish/protein prep as well. THe design is extremely well thought out and executed.

    I love this little knife and it is fast becoming my go to both in the kitchen and may be the field come fall.

    Got a Trillium paring knife for Christmas and what a great knife! Took me a few potatoes to get used to the weight of this knife, and now my other paring knives feel light and cheap. This knife occupies a special spot on a shelf in my kitchen, no way its going in the drawer with the rest :) Only improvement I can think of is I would put a smooth finish on the blade to make it glide easier through the more dense root vegetables, (as my Lynx has), but overall a great knife!

    I bought one of these knives probably three years ago now. I initially liked the look of the knife and after using it for a few years now, I have really come to love the quality of the design and materials used. You will not find a better knife for the price anywhere, and they are made in BC on top of that. I can’t recommend this knife, or this company enough!

    A fantastic little paring knife. Very comfortable to hold and the perfect size for peeling and paring. I haven’t had my hand cramp once while holding this. This holds a razor’s edge for an absurdly long time. I find myself looking forward to peeling potatoes and working all those tiny jobs that require dexterity.

    This knife makes for fantastic performance in a small package. I went with the cnc finish and red G-10 and the superb design of the knife and materials make for an amazing rock solid slicer in the kitchen. Amazing deal if you’re in the U.S. due to the exchange rate (as of July 2016).

    If you haven’t tried this little paring knife,I’d encourage you to do so. It quickly replaced my expensive Shun paring knife and becomes to my favourite little knife in my house. The quality of the knife is great and the design is brilliant. Instead of giving out as a gift, I’ve decided to keep it for myself.

    For many years I’ve used German made Henckels 4 stars in the kitchen. They are pretty good, but I wanted something with better steel. Having some pocket knives with S30V and S35V I thought that one of these steels would be just right. I ordered a Trillium to try it out. Before writing this review I placed an order for 3 more knives( A trillium, a Salal and a Coho). They are brilliant. Everything I expected and a little more. The edge holding is incredible, especially with my wife’s heavy use. Nice balance and finish. The real icing on the cake is that they are Canadian made. Well done. All The Best Harry Barth
